Tartines Unleashed: Creative and Delicious Open-Faced Sandwiches
Tartines, the popular French open-faced sandwiches, offer a canvas for creative toppings and beautiful plating. Whether you prefer simplicity or lavishness, tartines provide endless possibilities. Today, I'll share one of my favorite versions that tastes absolutely AMAZING. It requires a bit of prep, but it's worth it. You won't be disappointed, I promise.
If you’d like to give this delicious tartine a try, here’s what you’ll need and how to prepare it:
Ingredients:
2 slices of grain bread, brushed with oil and roasted in the oven until lightly golden
1 leek, sliced thinly, washed, and cooked in a small pot with a bit of water and oil or butter until pasty/creamy
4 cherry tomatoes, halved, tossed in olive oil, a drizzle of balsamic vinegar, salt, and pepper - place cut side up on a tray and bake in the oven at 400°F for about 15 minutes
Goat cheese, formed into small balls, rolled in an assortment of chopped herbs (parsley, cilantro, tarragon) and some crushed nuts (I love walnuts)
Half an avocado, thinly sliced
Fresh baby lettuce leaves
A few sprigs of dill
Assembly:
Layer the Leeks: Start with a generous layer of creamed leeks on the roasted bread slices.
Add the Greens: Add a few baby lettuce leaves, seasoned lightly with oil, salt, and pepper.
Top with Tomatoes and Avocado: Place the roasted tomato halves and avocado slices artfully on top.
Finish with Goat Cheese and Dill: Add the goat cheese balls and finish with a few sprigs of dill or your preferred garnish.

Feel free to create your tartine any way you like. This is my favorite tartine version, but all ingredients are exchangeable. You can add assorted pickles, sliced radishes, sprouts, spices, whatever your heart desires.
