Let's embark on a journey of love-infused gastronomy with this quick and easy recipe!

Ingredients:

  • 4 slices of sourdough or rustic bread

  • 3-4 tbsp olive oil

  • Ripe cherry tomatoes

  • 2 cloves garlic

  • 4 oz goat cheese***

  • Fresh basil

  • 1 tbsp balsamic vinegar (plus balsamic glaze for topping)

  • Salt & pepper, seasoning of your choice

  • 2-3 tbsp parmesan (optional)

  • Heart-shaped cookie cutter (optional) *** While goat cheese adds a delightful flavor burst to your bruschetta bites, feel free to substitute it with burrata or any other soft cheese of your preference if goat cheese isn't your favorite.

Preparation:

  1. Slice the bread into approximately half-inch thickness, then use a heart-shaped cookie cutter to create charming bread hearts or cut bread into any other shape.

  2. Halve the cherry tomatoes.

  3. Mince the garlic and chop the basil.

  4. Grate the parmesan cheese if using.

Instructions:

  1. In a mixing bowl, combine the halved tomatoes, minced garlic, chopped basil, 1-2 tbsp olive oil, balsamic vinegar, salt, pepper, and any additional seasoning of your choice. Allow the mixture to sit for at least 30 minutes to let the flavors meld.

  2. Preheat your oven to 400°F (200°C).

  3. Lightly brush both sides of the bread slices with olive oil and arrange them on a baking tray.

  4. Bake in the preheated oven for 5-10 minutes until the slices turn golden brown and crispy.

  5. Spread goat cheese over the toasted bread slices.

  6. Spoon the tomato basil mixture evenly onto the toasted bread hearts.

  7. Sprinkle freshly grated parmesan cheese on top (optional)

  8. Drizzle a little balsamic glaze over the appetizers (optional).

  9. Garnish with a basil or parsley leaf for an extra touch of elegance.

  10. Serve immediately and savor the love-infused flavors with your Valentine!

Whether you're celebrating with your significant other, family, or friends, this heartfelt appetizer is sure to make everyone feel special. Enjoy creating cherished memories together this Valentine's Day!
